I will rate the following knitting books for ease of use by beginning knitters. I remain a very unsophisticated knitter so you can trust me on this but that also means I have tried all of the books so I can't say others are bad just because I haven't had time to use them.
1. Interweave's: Socks
This is the most popular book, I have been selling for 10 years.
2. HOMESPUN HANDKNIT: Caps, Socks, Mittens & Gloves
Many good patterns, lots of things to try.
3. HOW TO KNIT: The Needlecraft Resource Library, Volume Two
by TNNA
For those who have never held needles in their hands before.
4. Simply Scarves
A very understated book with absolutely marvelous patterns.
Of the latest books, One Skein and Oddball Knitting are immensely popular.
